Bars on Chapel Street open early and stay open late. Wine bars pour from mid-afternoon for the after-work crowd. Cocktail bars hit their stride around 8. Pubs in Windsor run from lunch through to close. The strip covers a lot of ground between the first drink and the last.
The range is wide. Vodka bars, wine rooms, Japanese whisky dens, rooftop terraces, dive bars and bistro bars all share the same few kilometres. Some places lean into a tight list done seriously. Others keep it loose with a long menu and a loud room. A few do both depending on the night.
Each neighbourhood brings its own version of a bar. Windsor runs gritty and unpretentious, pubs and late-night spots that don’t dress up. Prahran mixes old locals with newer natural wine bars that opened quietly and filled up fast. Greville St hides some of its best options behind unmarked doors and narrow shopfronts. South Yarra turns it up with rooftop bars and cocktail lounges that draw a dressed-up crowd from across the city.
