This year, Galah are taking it up a notch for their Aus Day fundraiser. Available from 26 Jan to 3 Feb you can enjoy the Galah – a grapefruit margarita drawing from the peach colours of the Galah’s frill; the Cockatoo – a mezcal sour complete with a hand stencilled cocky on top; a Kookaburra – blueberry juice with a strawberry gum syrup, Never Never gin, Amaro and lemon juice who is jumping up and down with its pants on fire to complete the drink; or the Rainbow Lorikeet – a tutti fruity layered beverage paying homage to the colourful bird. Galah is also donating $1 for each of the four cocktails sold to Bird Life Australia, a non-for-profit bird conservation group working across Australia.
